Baigan ka bharta

Baigan ka bharta ia an easy and tasty recipe with few spices. It is made with roasted brinjal , onion and tomato.

Step by step recipe:

  • Spread oil over Brinjal and roast it over open flame. Flip it again and again till the skin scotches.
  • Peel the skin and mash the pulp of brinjal and keep aside.
  • Heat 1 spoon of oil in a pan. Add 2-3 chopped garlic cloves; ½ tsp crushed ginger, 2 chopped green chilies, 3 chopped onion, 1 tsp salt, saute and let it cook for 2 minutes.
  • Add ½ cup peas and mashed brinjal, Mix it.
  • Add 1 tsp red chili powder, cover it and let it cook for 5 minutes.
  • Further add 1 chopped tomato, cover with lid. Wait for another 5 minutes.
  • Add 1 tsp turmeric powder and coriander.
  • Give it a mix and serve hot.

Ingredients:

  • Baigan/brinjal 1
  • Onion (chopped) 3
  • Tomato (chopped) 1
  • Peas ½ cup
  • Oil 1 serving spoon
  • Salt 1 tsp
  • Red chili powder 1 tsp
  • Turmeric powder 1 tsp
  • Garlic 3-4 cloves
  • Ginger(crushed) ½ inch
  • Coriander leaves for garnish
